Chipotle Chicken Pasta

Ingredients:

  • 8 oz pasta of your choice

  • 1 bunch asparagus, trimmed and cut into bite-sized pieces

  • 1 lb chicken breast, diced

  • 2 tablespoons lemon juice

  • 2 tablespoons olive oil

  • 2 teaspoons Southwest Select seasoning

  • 2 tablespoons butter

  • 1 red bell pepper, chopped

  • 1 yellow bell pepper, chopped

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil (for cooking chicken)

  • 2 tablespoons honey

  • 1-2 tablespoons adobo sauce (adjust to taste)

  • 1 cup heavy cream

  • 1/2 cup Parmesan cheese, grated

  • 1 cup frozen green peas

  • Tortilla strip chips and fresh cilantro for garnish

Instructions:

  1. Boil water for pasta in a large pot. Add asparagus and cook for 2-3 minutes until tender-crisp.

  2. Remove asparagus and add pasta to the boiling water. Cook until al dente. Drain and set aside.

  3. In a bowl with diced chicken, add lemon juice, olive oil, and Southwest Select Seasoning. Allow it to marinate while you prepare the rest of the dish.

  4. In a large skillet, melt butter over medium heat. Add chopped bell peppers and onions, cooking until lightly browned.

  5. Add minced garlic and cook for an additional minute. Remove the vegetables from the skillet.

  6. Add olive oil to the skillet. Increase heat to medium-high. Brown the marinated chicken on all sides.

  7. Stir in honey, cooking for an additional minute.

  8. Return the bell pepper mixture to the pan. Add adobo sauce, heavy cream, and Parmesan cheese. Stir well.

  9. Cook for 3-4 minutes until the sauce thickens.

  10. Add the cooked pasta, asparagus, and frozen green peas to the skillet. Stir to coat everything in the creamy sauce.

  11. Garnish with tortilla strip chips and fresh cilantro.

  12. Plate the dish and enjoy for a delightful dining experience

Suggested Sides/Wine & Drink Parings:

  1. Garlic Bread: A classic choice that never disappoints. The buttery, garlicky goodness pairs well with the creamy pasta, and you can use it to scoop up any extra sauce.

  2. Caesar Salad: The crispness of romaine lettuce, the savory Caesar dressing, and the crunch of croutons create a refreshing contrast to the creamy pasta.

  3. Avocado and Tomato Salad: A light and refreshing salad with ripe avocados, juicy tomatoes, and a simple vinaigrette. The acidity and freshness balance the richness of the pasta.

  4. White Wine: Chardonnay: A full-bodied, oaked Chardonnay can work well with the creamy texture of the pasta and provide a nice balance to the heat from the chipotle seasoning. Look for a Chardonnay with notes of tropical fruit and buttery richness, as these flavors can harmonize with the dish.

  5. Cocktail: Margarita: A classic margarita with its citrusy and tangy flavors can be a delightful pairing with a creamy chipotle chicken pasta. The acidity from the lime juice can cut through the richness of the pasta sauce, while the tequila adds a complementary kick. Consider rimming the glass with salt or chili powder for an extra layer of flavor that complements the Southwest seasoning.

Tips:

  • For a time-saving option, prep the vegetables and marinate the chicken in advance.

  • Adjust the spice level by varying the amount of adobo sauce according to your preference.

  • Freshly grated Parmesan cheese enhances the flavor, so consider grating it just before use.

  • Pair this dish with a crisp green salad or garlic bread for a well-rounded meal.

Embark on a culinary journey with this Creamy Southwest Chicken Pasta, where every bite is a symphony of flavors and textures.
