Everything But Bagel Protein Bagels with EBB Seasoning

Easy homemade Everything But Bagel Protein Bagels, made with cottage cheese and topped with Everything But Bagel Seasoning. Baked or air-fried, these bagels are fluffy, flavorful, and perfect for breakfast or snacking.

Oven Method:

  1. Preheat & Prep: Preheat your oven to 375°F and position a rack in the top third. Line a large baking sheet with parchment paper.

  2. Blend the Cottage Cheese: Add cottage cheese to a food processor or blender and blend until completely smooth, scraping down the sides as needed.

  3. Make the Dough: Transfer the blended cottage cheese to a medium bowl. Add the self-rising flour and mix until a dough forms and pulls away from the sides of the bowl. Turn the dough out onto a generously floured surface and knead 8–10 times until smooth. Add more flour as needed until the dough is no longer sticky.

  4. Shape the Bagels: Roll the dough into a ball and divide into 4 equal pieces (about 80g each if you want uniform bagels).Roll each piece into a 6–7 inch rope, about 1 inch thick. Join the ends to form a circle and pinch to seal.

  5. Season: Brush the tops with beaten egg and generously sprinkle with Everything But Bagel Seasoning.

  6. Bake: Bake for 25–30 minutes, until puffed and golden brown. Let cool for 15 minutes before slicing and serving


Air Fryer Method:

  1. Preheat air fryer to 350°F for 5 minutes.

  2. Lightly spray the basket with nonstick spray.

  3. Air fry bagels for 12–14 minutes, until golden brown and cooked through.


Tips:

  • Blend the Cottage Cheese Until Completely Smooth: This step is key for a tender, bagel-like texture. Any lumps can make the dough uneven, so take the extra minute to blend well.

  • Flour as You Go: The dough can be slightly sticky depending on the brand of cottage cheese you use. Don’t be afraid to add small amounts of flour while kneading until the dough is smooth and easy to handle.

  • Seal the Bagels Tightly: When shaping, pinch the ends together firmly. A tight seal prevents the bagels from opening up while baking or air frying.

  • Be Generous with the Seasoning: The Everything But Bagel Seasoning is the star here. Sprinkle generously after the egg wash so it sticks and delivers bold flavor in every bite.

  • Check for Doneness, Not Just Color: Bagels should be golden brown and cooked through. If they look done but feel soft in the center, give them a few extra minutes.

  • Let Them Cool Before Slicing: Allowing the bagels to rest for at least 10–15 minutes helps them set and prevents a gummy interior when slicing.

Store bagels in an airtight container at room temperature for up to 4 days.
